Leftover curry is one of life's small joys — and it genuinely tastes better the next day, because the spices continue to meld overnight. But rice and cream-based sauces need proper handling to stay safe.
Here is the method our kitchen uses at home, covering fridge times, freezing, and the best way to reheat every part of a Jaflong Tandoori takeaway.
Fridge and freezer times
Cool leftovers quickly and refrigerate within two hours. Curry and dal keep well for up to three days in a sealed container; rice should be eaten within 24 hours.
Most curries freeze beautifully for up to three months — freeze in portion-sized tubs. Cream-based sauces can split slightly on thawing; a splash of water and gentle stirring brings them back.
Reheating curry the right way
The hob beats the microwave. Warm the curry in a saucepan over a medium-low heat with a tablespoon or two of water, stirring occasionally, until it simmers for a full two minutes.
In the microwave, cover loosely, heat on medium power, and stir halfway. Either way, the curry must be piping hot throughout — above 75°C in the middle.
Rice and naan
Rice is the one item to treat carefully: refrigerate within an hour, keep no more than 24 hours, and reheat only once until steaming hot all the way through.
Revive naan under a hot grill for 60–90 seconds with a light brush of water or butter. It comes back crisp at the edges and soft in the middle — nearly as good as fresh from the tandoor.
