Short answer

Not always. A classic Indian base sauce of onion, tomato, garlic, ginger and spices is vegetarian, but restaurant versions are often finished with ghee, cream, yoghurt, or a meat or fish stock, and many kitchens cook vegetable dishes in the same pan as meat. Ask which base is used and whether it is cooked separately.

What goes into a curry base

Most Indian restaurants build dishes on a large batch of base gravy: slow-cooked onion, tomato, garlic, ginger, and ground spices, loosened with water or stock. That base is vegetarian in itself. The question is what happens next — the finishing fat, the stock, and the pan the dish is cooked in.

The three things to check

  • The fat. Ghee and butter make a sauce vegetarian but not vegan. Oil-based cooking keeps it vegan.
  • The stock. Some kitchens loosen the base with chicken or fish stock, or add shrimp paste for depth. That makes the sauce non-vegetarian even with no visible meat.
  • The pan. A vegetable dish cooked in the pan just used for lamb is not suitable for strict vegetarians. Ask for separate preparation.
