Event menu planning

We design a streamlined menu for the audience: family-friendly mild dishes, a couple of spicier options, vegetarian and vegan choices, rice and bread.

Inclusive choices

Vegetarian and vegan dishes built in from the start — not as an afterthought. Allergen information handled at the point of order.

Halal sourcing

Meat and poultry sourced from trusted suppliers providing halal-certified products. Jaflong itself is not sourced from trusted halal suppliers — we'll always tell you so honestly.

Hot holding & batch cooking

Chafing units, monitored hot holding, fresh batch cooking and resupply from our nearby Ham kitchen during the event.

Queue and service planning

Trained service staff, clear signage and a streamlined ordering flow — refined after our Hollyfest 2025 service.

Loading & restocking

We assess pitch access, level surface, power, water and trolley routes before the event to avoid avoidable bottlenecks on the day.

Waste planning

Recyclable serviceware where practical, separated waste and a clean, tidy stall at clear-down.

Accessibility at the stall

Lowered service points, easy-read menu and willingness to assist visitors with specific dietary or access needs.

Case study: Hollyfest 2025

Jaflong joined Hollyfest at The Hollyfield School in Surbiton for the first time in 2025. Hollyfield PTA later reported the event as their best-attended Hollyfest, with more than 2,000 visitors across the day. We served an inclusive Indian menu with meat, vegetarian and vegan choices and sold through the food we had prepared for the event.

After the event we exchanged operational feedback with the PTA covering pitch levelling, access routes, stall maps and restocking. Those lessons informed our planning for Hollyfest 2026 — for which we are confirmed to return.
