What is a dal tarka?
Dal is a dish of slow-cooked lentils. The tarka is a final sizzle of garlic, cumin and chilli in hot oil poured over the top.
We make two versions: dal tarka with yellow lentils, and tarka dal with red lentils.
How we cook it
We cook the lentils until soft, then temper them with garlic, cumin and dried chillies.
