What is a tikka masala?
Tikka masala starts with pieces of marinated chicken tikka cooked in a clay tandoor oven, then finished in a creamy, lightly spiced tomato sauce.
It sits between a korma and a bhuna for heat — flavourful rather than hot.
How we cook it
Our chicken is marinated, charred in the tandoor and then simmered in a fresh tomato and cream masala, finished with dried fenugreek leaves.
