What is a madras?
A madras is a fairly hot, deep red curry with plenty of chilli, often balanced with tomato and a touch of sourness.
The British restaurant madras is named after the South Indian city of Chennai, once called Madras.
How we cook it
We cook ours South Indian-style with a fiery base tempered with coconut, so the heat is full but not harsh.
